Billionaire’s Bacon

More than once last night at our Bacon Blow Out dinner party we heard, “This is the best bacon I’ve had!”  It’s really very simple to make, but your taste buds will go crazy.  The glaze requires a spicy jam but the heat is cooked out, resulting in something like bacon candy.  Trying a bite of this might ruin you for regular bacon, especially since this is so easy to put together.

For 15 people

4 lbs. of Niman Ranch uncured applewood smoked bacon

1 cup of Inna Jam pretty spicy Fresno chili jam

3/4 cup of brown sugar

Preheat oven to 300 degrees.  Combine the jam and brown sugar in a bowl.  Add just a little water a tablespoon at a time to give the glaze a sandy but spreadable consistency.

Lay the bacon out on a rack that is placed on a sheet pan.  You will probably go through lots of racks and sheet pans, or reuse what you have, if you’re serving 15 people.

Brush the top side only of each bacon strip with the glaze.  Bake for 1 hour 30 minutes.  The bacon will appear soft and droopy when you pull it out of the oven, but let sit 3-4 minutes before serving and it will firm up.
